Commercial Ice Machine Service

Ice is a food product. The machine making it is a food-contact surface — and it is usually the dirtiest thing in the building.

Most Ice Machine Failures Are Water Failures

Ice machines fail on water long before they fail on refrigeration. Texas water is hard, and hardness becomes scale — on the evaporator plate, in the water distribution tubes, on the float and the water pump. Scale insulates the plate, which stretches the freeze cycle, which reduces production, which is when someone calls and says the machine "is not making enough ice."

The other half of the problem is biological. The interior of an ice machine is dark, wet, and constantly above freezing during harvest — ideal conditions for slime and mold in the water trough, on the curtain, and in the bin. Because ice is regulated as a food, that contamination is a health-inspection finding, not a housekeeping nitpick.

Both failure modes are prevented by the same thing: a real cleaning and sanitation program on a defined interval, using the manufacturer’s scale remover and sanitizer rather than whatever is under the sink.
